Ingredients

  • Free range Eggs whisked until smooth 2
  • Mashed Bananas 4
  • Liquid Coconut oil 1/2 cup
  • Flour (I suggest Chestnut or Cassava) 1 cup
  • Raw Honey 2 tbsp
  • Activated chopped Pecan Nuts 1 handful
  • Bicarbonate Soda (Gluten Free) 1 tsp
  • Baking Powder (Gluten Free) 1 tsp
  • Himalayan salt 1 tsp

You’ll need

  • Classic 2 lb Loaf Tin 1
  • Large Mixing bowl 1
  • Teaspoon 1
  • Tablespoon 1
  • Parchment paper 1
  • Hand whisk 1

Directions

Step 1

To activate your Pecan nuts leave in a bowl of filtered water overnight then rinse well before use

Step 2

Line your loaf tin with parchment paper

Step 3

Preheat oven to 180°C

Step 4

In a large mixing bowl add the Eggs, Bananas, Coconut Oil, Flour, Honey, Pecan nuts, Bicarbonate Soda, Baking Powder and Salt combine thoroughly with strong whisk

Step 5

Fold into the loaf tin and cook at 180°C for 45 minutes

ENJOY warm or cold
Keeps for 4 days in sealed tin or 4 months frozen
